The modest wine collection is of mostly Iberian red wines from the late 80s and 90s primarily from the Ribero del Duero & Rioja region with a selection of some Mallorquin Bodegas
It goes without mentioning that generally the older a wine is the more tertiary savour it will acquire with fewer primary flavours…however that said, a well-aged wine will certainly change physically but with a trend toward enriching its character evolving into something different but wholly fascinating
Bottles recently corked have been very pleasant with the correct aging bouquet
